Cacao and chia seed pancakes with berry sauce (Gluten Free)

I made these pancakes the other week when experimenting with chia seed and they were so good. My 4yr old ate 2 and loved them. There is no refined sugar in these, but they are still sweet. They have cacao instead of cocoa for a healthier chocolate taste and the berries set the pancakes off nicely.


Ingredients
2 Tablespoons of Chia seed left in 1/4 cup water to soak overnight to form a "gloop" aka gooey mixture
2 Tablespoons Cacao
1 cup GF plain flour
1/2 cup milk
1/4 cup water
2 eggs
2 Tablespoons pure maple syrup
Butter for cooking

Berries
1 cup of berries (I used organic, frozen berries)

Method
Mix the chia and cacao together. Add in the other ingredients and mix to combine so there are no lumps. I try not to mix it too much, only as much as needed and I do it by hand. I find gluten free recipes sometimes go a bit hard or gluey if mixed too much.

Place a frying pan over medium heat. Melt some butter in the pan and pour 1/4 cup of the mixture into the pan. Cook for about 1 - 2 minutes or until golden brown, then turn over and cook the other side.

This the berries, simply heat them in a saucepan until they start to form a liquid. Mix while you are heating them, then pour over the pancakes. You can add a little maple syrup if you like to sweeten, or a sprinkling of sugar if you prefer.

These pancakes were very filling, more nutritious than regular pancakes and they tasted great!
